Why is it that Shellshock Live avoids the idea of tunnels, floating chunks or even slight cliffs that roof over a small bit of ground? The ground is always visible to the sky, no matter what, and im just curious why Shellshock has chosen to make this a very solid trait about it.

Well I didn't develop the game so I can't say for sure but I assume it's due to not wanting to be too similar to the Worms franchise. Worms is pretty similar to ShellShock with the exception of what you just described. It could also be because of a focus on physics in the game, though that would be less apparent as there are quite a few details in the game that do not apply to physics. And finally, it could be because were that a thing, areas of the map would be inaccessible without the use of items, which are limited resources to you.

There was a tank game just like Shellshock that was made way in the past. Kchamp kinda copied it, but put his own twist on it.
